  1. Schrimp Scampi with Alfredo Sauce

    * 12-18 frozen schrimp scampi
    * 1 jar alfredo sauce
    * spaghetti noodles or your favorite shapped noodles
    * 1/2 c milk

    Start to boil a pot of water for your noodles. Add a couple of drops of olive oil to the water. When water is boiling, add noodles.

    In a small sauce pan, add alfredo sacue and milk. Cover and simmer on low.

    You can micro or brown the schrimp scampi in pany for 6-8 min on a side (they will plump up and turn pink).

    When noodles are tender, drain.

    Pour alfredo sauce & a few shrimp scampi over noodles.

  2. Shrimp Dip

    (from my mother-in-law)

    * 1 can shrimp (try a cab of bumble bee shrimp)
    * 1 pkg cream cheese
    * cocktail sauce (see my homemade cocktail sauce receipt)
    * Ritz crackers

    Get a plate out (paper plate works just fine).
    Take out the cream cheese & melt in the microwave for about 15-20 sec at a time. Test to see if softened, if not, keep on microwaving until soft. Spread evenly throughout the plate when softened.

    Make your cocktail sauce or get a jar & place over the cream cheese spread.

    Drain the shrimp and spread over the cocktail sauce.

    Dip with ritz crackers and enjoy!!
