Popcorn Chicken
1 lb pound chicken pancake mix favorite seasoning (all season, alpine, or what you like to season with)
* Cut up the chicken in bite size's pieces (ie 1" x 1", or bigger) * Season them * Dip them in the pancake mix * Place them in hot oil (canola or EVOO, I used EVOO). You can use a fry daddy. I used a large skillet with long edges. Make sure the chicken is completly covered in oil * Fry in oil till brown * Dip in ranch or try coctail sauce
Thaw and clean a whole chicken, rinse. Apply a poultry rub or other desired seasoning.
Use 12oz can beer or soda. Pour out half of contents. You may add seasoning to beer such as worchestire sauce, liquid smoke, garlic, etc.
Place chicken upright over beer can, stuff a small potato or onion in neck and place on grill. Place in a pie pan and add 1/4 cup of water. For oven : Place in a pie pan and add 1/4 cup of water. Cook at 350 degees.
Cook 1-2 hours or until skin is dark golden brown and crisp. Using a meat thermometer, temperature should reach 180 degrees.
When done transfer in an upright position to a platter. Let stand 5 to 10 minutes.

* Take a frying pan, place 1 tbs butter, drizzle some evoo in the bottem & heat on stove
* Take a cereal bowl and crack one egg & fill the rest of the bowl with milk (leave an inch or two) Mix the egg & milk with a fork or wire whisk
* Take the chickn breasts & cut them in half (the width side), so they arn't so thick. It doesn't take so long to cook
* Take 1 cup of flour & place on a plate or paper plate
* Dip each chicken breast in the flour, the the egg mix, and back into the flour
* Season one side the chicken breast with Season All & place that side down in the frying pan. Then season the other side
* Fry 6-12 min & then flip. They should start to turn a golden brown. Feel free to flip each side another time for a couple of more min each, for a more golden brown & it also leaves more stock in the pan for gravey

It tastes like mini fried chicken w/ the bone.

1 lb Chicken legs (and or mix with leg quarters)
Olive Oil
Chili Powder
Garlic Salt
Place chicken in a bowl with Olive Oil.
Rub the oil into the chicken.
Place chicken on a large platter (if legs quarters, upside down.
Sprinkle chili powder and garlic salt & then rub in also. Flip the chicken and sprinkle with chili powder and garlic salt & rub again.
BBQ 10-13 min on a side
